Art Work

As a parent , we were so thrill to received a mail week ago from my daughter art teacher, said that one of her art work has been chosen to represent her school at the North Art Exhibition 2014 !! This is 2 years in row she is doing great at Art Class at her school. Yes, I am so proud of my little one , who doesn't ?   Last night we attended the exhibition - it was nice night , so many art work delivered from kids from age 6 to high school ages from around the region, I saw so many talented kids - they are really talented kids, so many pretty artwork. I couldn't take many picture since the place is too crowded ..



And since she did fabulous job, I think she deserved a good treat. I took her to yoghurt place that she loves most, Froyo .. !! yuumm

Thank You .. *I'm back*

Forgive me not updating my blog for almost 2 and half months - and I know some of my friends and contacts still looking after me ; wondering where am I going ? What happened with me . For that matters I would like to say Thank You that you are so loyal to me.

I'm still around , kind of busy with my family to take care , but I promise I will come back when I have a plenty time like before to share my recipes to you and visiting you again.

You know, sometime life is going to different direction without warning - our life just turn to other directions that we never expect . It was sad, it was nerve- racking . For some reason, I need to be strong ; I must to believe that everything happen for a reason - always rainbow after rain. I have no energy to be sad, and at the end we know, there is Allah always help us to find the way out :)

I (we) always feel blessing that we have many family and nice friends around . To me , is so easy to see who is your truly friend is , they who come to you during hard time and not always in a good time. Trust me, is not always about money, but just simple question, if we still alive or not.. that is mean a lot to me.

I know I cant thank you enough for what friends, family did to us but just let me share a little thing that I made from the bottom of my heart. How grateful I'm - to have you as my family friends .

Summer Quilt Blanket

It took a long weeks, to finished this blanket .. I didn't feel to do anything for several weeks, just being lazy :(  In fact, this is a first time I did a hand stitching for top quilt.. Did you notice the leaf petal on the plain block ?  I like the result.  I think I will make another one , but I promise this time I will do it fast, before the plant season is coming, I will be busy working out door rather than sit and sewing.. well, we will see.
 
I don't bother to measure the finish size of quilt, it's quite big, thou. Perfect for summer picnic blanket. In fact the quilt is already on the hand of  a lovely nice lady :D - She was so happy with the quilt .
 
 
 
And for the weekend, I made 2 scrappy bucket for me and my daughter too, it was fun to grab of left over fabrics and create something cute like this. The big version is for me, I put a lot of stuff in there, and the small version is for my daughter, she loved carry here and there... She put her daily journal and crayons , she love to write everything she see while she sit in the car :D

cold weekend..

 
Already March second !! Still cold at STL - and just typical Saturday morning, my husband go for half day work, most the time just meet clients , and me must to take a little one for gymnastic class every Saturday morning.
Wake up early this morning my 6yo daughter said, "today is Dr. Seuss's Birthday and I want green egg for breakfast" *you might know book A Green Eggs And Ham- from Dr. Seuss* eeww...*  anyway, she made her own egg, 1 egg + 1 drop of blue food coloring , whisk very well = green egg. {ooh, my I forgot to take a picture} , oh yups.. she eat those green egg + 2 slice of bread and ready for gymnastic!
 
Yesterday she brought home , a change box as a part of Pennies for Patients Program. Which is the kids from her school will collecting spare change around the house and donating the money to support LLS's mission (Leukemia & Lymphoma Society) - mostly for kids with cancer.  And what make me proud is, she just 6yo and she already think one step ahead , if she can do a lot of chore and get paid for it, her box will fill up soon.  And she really did ..  make up her bed, clean her room, fold the clothes etc.  And she get pay for good cause  :)

What? Me ? during cold weekend ? is too cold to go outside, just reading some good books and flip sewing magazines I got several days ago. It's really good book, though..   The Japanese Sewing book I got from Joann's - on sale + commotion coupon, the final price was $7 ! And James Patterson novel (my favorite author) just 75cent from Thrift Store.
 
In fact, I have another reason to visit fabric store soon *I can't find exact coordinating fabric for binding and backing from my drawer* {really??, are you serious ? } - well, do you see my blankets ?? those are not finish, I don't have a fabrics .. ooh GOD ... ^_^

A beautiful memory

Last week, I was contacted by my daughter's teacher ..(Mrs.H) she asked me if I willing to do extra quilting work outside of personal. And without doubt I said 'Yes' - oh No, the story not just that .. Mrs.H sister will having a baby on April and their family will having a baby shower  next week, their late grandma started a cross-stich baby quilt, and so sad, she passed before she finishing the work.

Honest to GOD, I had a goose bump when I saw her work for the first time, the cross stich absolutely beautiful - I can feel her hand 'dancing' on the fabric while she made this beautiful blanket.

So short story, I agree to sew backing and binding , well.. I still feel nervous even I sew several blankets already .. you know, this work has a beautiful memory, I don't want to messing it up.

And in 2 hours I finished the quilt, and still have a left over fabrics and I decided to make a little pillow too.
 


I'm not taking credit for the quilt, I'm just did a little sewing on quilt . But still, this is a nice thing ever happened in my sewing experience.

So, what do you think about the quilt ? I know you will agree with me .. this is a such a beautiful handcraft made by a beautiful lady.. God Bless Her..

Sneaky mommy .. Hidden Veggie Dish

Ok, here it goes. When I grew up , it was so rare to see broccoli or cauliflower on our dinning table. Well, my mom used to cooked a lot of different kind of veggetables, which is so easy to find in the market such a waterspinach (kangkung) , bean sprout (toge), Chinese mustard green (sawi) etc. And since I moved to different county those vegetables that I used to eat become a luxury veggie for me,  – if I want to get those I need to drive long way to Asian Store near by my house about 12miles.

Back to broccoli and cauliflower story, I’m not ‘crazy’ about eating those 2 green veggies – booo !! Anyway, I try my best to give , to introduce any kind of vegetable to my daughter. So far, she is doing good : her favorites are spinach, carrot and beansprout. But with broccoli or cauliflower, I need to use my trick. “Hidden Veggie Dish”. so far its work well.

Like this recipe, she has no idea I put veggies that she refuse to eat into the dish. *grin*

Cauliflower Soup:
3 tablespoons unsalted butter, at room temperature
2 ribs celery, chopped to yield 3/4 cup
1 large or 2 small shallots, thinly sliced
Kosher salt and freshly ground pepper
2 cloves garlic, coarsely chopped
4 cups low-sodium chicken broth
1 tablespoon chopped fresh thyme
1 head cauliflower (1 1/2 pounds), cut into 1-inch pieces
Hand full of broccoli


Garnish : croutons and turkey bacon *we didn’t eat bacon, so we used turkey but you guys can substitute with bacon too.
 

Directions
In a large saucepan or Dutch oven, melt the butter over medium-high heat. Add the celery, shallots, 1 teaspoon salt and 1/4 teaspoon pepper, and cook until soft, about 4 minutes. Add the garlic and cook until aromatic, about 30 seconds. Stir in the chicken broth, thyme, cauliflower, broccoli. Bring the mixture to a boil. Reduce the heat to a simmer, cover and cook until the vegetables are tender, 20 to 25 minutes.

In batches, puree the soup in a food processor until smooth. Season with salt and pepper. Ladle the soup into bowls and garnish with the croutons and turkey bacon

Friday Project .. done !!

Phuuuih.. finally, my 3 quilts blanket are done ! I just need to put my sewing label on it. I put them on listing at my new Facebook Pages, and I'm still thinking to create a new Etsy shop as soon as possible.. (well, if the customer take a whole blankets, the story will be different than :)  I gave you a sneak peek last Friday , and voila .. you can check the result at my pages here :
 

Anyway, now I have time to bake again .. my "cookies monster" member are craving for my cake .. 

Ubee Cake is an easy cake, eem.. a little trick for my hubby actually, he doesn't like taste of sweet potatoes - so, I just mixed the sweet potatoes into the cake batter .. No complain, and he ate almost half of portion of 9inches of cake LOL.

 



 
UBEE CAKE / Sweet Potatoes Cake
100 grams yellow sweet potatoes, wash, steamed, smashed.
75 grams lite coconut milk
75 grams butter, melted
10 yellow eggs
2 white eggs
125 grams granulated sugar
½ tsp salt
125 gram all purpose flour
¼ tsp baking powder
25 grams rice chocolate (meises)

1. Prepared the oven for 350 F -  greased 9 inches round baking pan. Set a side

2.Blend sweet potatoes and salt together, set a side. Add melted butter, mixed very well.

3. With hand mixer whisk eggs, sugar, salt until well corporate. Add flour and baking powder, stir with spatula. Add sweet potatoes mixture, once at the time – make it 3 times, mix well. at last, add rice chocolate, stir it.

4. Bake for about 35-40 minute or until the skewer comes clean when you poke in the middle of cake.

Sneak Peak Friday

pardon me, not much of baking this day .. I'm lack of time - too many things to do, too little time.

As I remember, I update my baking recipe about 3 weeks ago, now it's almost end of September, and Autumn is just 1 day ahead. Where is  the time fly ? don't ask me .  :(


Anyway, this just a little sneak peek from my project that need to be done over the weekend, cross finger. For my customer who is so patiently waiting 2 quilts. I hope *with all my heart* she will like the version of happy quilt.

Me time...

quilting time mean me time !, while wife taking over a dinning table mean no dinner tonite. LOL - should I send hubby and kid going to McD for dinner  ? No doubt, my daughter will have 'dora dancing' , *she wish ..  I send her for McD meal .. :O*

Anyway, this is a big quilt blanket I ever make, made me move my sewing machine from basement to dinning table.. jeezz.. and than I did boring job ever, sewing vertical and horizontal line for at least twin bed size blanket. And I can say ... I won't do this no more :p

Another Happy Colors..

I don't have any sewing skill background, I never attend sewing class or what so ever, I proud to say that I'm self taught sewing who learn from many mistake. It take me a while to figure out all the steps. And until today I still learn from everywhere. Including, Youtube. Yeaah right, I'm graduation student from Youtube :O But so far, I'm happy with every result.  And I definitely make quilts to be loved and used, not show quilt. The lady who order this picnic blanket just want a happy colors. My idea about happy colors is to put as many bright pretty colors as I can. I hope she will like it.

I spy in the garden picnic blanket is a custom order picnic blanket , with size 40x48inch. (Reserved - ready to send to France this week)   SOLD
And here is another blanket I finished 2 weeks ago. The lady who got this blanket was so happy. I called this : Sweet Water Picnic Blanket - size 37x49 inch, 100% cotton from  MODA  and Robert Kaufman fabric collection

Late Bloomer - I'm not perfect series

Have you ever in situation that when you see around everybody looks are so perfect , lucky in life but you ?. Everyone looks so divine. They have many things in life, they are become a great author, have their own careers, and looks so brights !! I feel that way sometime (ok, alot)  and those feeling made me 'sad '. Not until I sat with an old lady, friend of mine a couple days ago - we had a cup coffee , chit chat for almost 2 hours . We felt comfort with each other, and share our stories together. The story of her's life made me almost cry - I feel that is too much for her to 'carry' herself. But I tell you, she is the strong woman I ever met.  I'm not gonna tell you, what kind of situation she has. But the point is : you can't always look up , you need to look down too, to see people who doesn't have a perfect life and those will make you feel like  a lucky person in the world who doesn't need to go through that situation.  That is for sure, comforting me that I can't be perfect because I am  what I am - be myself and feel blessing with things on my hand right now, I don't need to see how beautiful people grass is, I just need to trim my own grass and make them as beautiful as people yards :D
Anyway, what on the earth this pictures has thing to do with story above ? I tell you this one, may be I'm a late bloomer  ; I just start sewing, quilting, baking when my age is more than 40yo!!  LOL  - and this is my first time quilting ever, well, I made several projects before but typical of me cut..sew and set aside, never intend to finished it up.  But this project really make me happy ; and if you see carefully, the sewing line is not straight ; kind of mess up little bit - but after the project finish, the picnic blanket is look 'perfect' to me   LOL  - oh well, mommy try to make an adjustment  ^__^

NO BAKING TODAY : Scrapy Log Cabin

I always want to learn about quilting ! I can't belive that I did ; this is my first time scrapy log cabin ever. The block keep on growing .. and I still don't know how far i can go :)

Don't worry, not hard at all - you can find so many free tutorial through flickr or youtube . You just need a lot of scrap fabrics and passion for sure :)

Celebrate 42nd Birthday

Inside every older person is a younger person – wondering what the hell happened yeah.. right ! Anyway, I feel blessed and lucky at 42 ; with a great families I have, with many nice people around me ..

 
Pecan Chocolate Cake

Ingredients :
7 oz. dark chocolate
1/2 lb. salted butter
2/3 c. plus 1 Tsp. sugar
1/2 c. half and half
2 tsp. vanilla extract
1/4 tsp salt
4 eggs

Directions :
Preheat oven to 350.
Using butter or shortening, grease a 10" spring form pan.
In a heavy saucepan over low heat, melt the butter and dark chocolate.
Once melted and combined, remove from heat and add sugar, stirring to dissolve.
Stir in the half and half, vanilla and salt.
Whisk the eggs in a separate bowl.
Slowly pour and mix the chocolate mixture into the eggs, mixing completely until very well blended.
Pour the batter into the spring form pan and bake for 20 to 25 minutes, until the cake is just set.
And be sure the ring is properly attached to the base of the spring form pan before pouring the batter in or you are in trouble!
Remove cake to a cooling rack and allow to cool completely before removing the ring.
Remove the ring and refrigerate the cake until chilled, leaving the cake on the spring form base.

Decorate your cake with Dark Chocolate Ganache

Dark Chocolate Ganache
2 cups heavy cream
1/2 cup confectioners' sugar
1/8 teaspoon salt
1 pound bittersweet chocolate, roughly chopped

Directions

1.In a large saucepan, bring 2 cups heavy cream, 1/2 cup confectioners' sugar, and 1/8 teaspoon salt to a boil. Remove from heat; add 1 pound bittersweet chocolate, roughly chopped, and let stand, without stirring, for 1 minute. Whisk just until combined. Refrigerate, stirring occasionally, until spreadable, about 1 hour.

NO BAKING TODAY : Apron & Kitchen Towel

Some people try to get a perfect gift for friends and family during this month, I know must be giving you a little bit headache ^_^  . So why don't you try to make your own gift for someone you love ? An apron and matching kitchen towel, maybe is a good gift for them ? What you need is to buy a lovely fabric  like this . I called 'From Tokyo with Love Theme'.

Just a yard or less cotton fabric for an apron (I got from Jo-Ann Store ; about $8/yard) and half yard linen fabric for kitchen towel. I add a coffee pot hand stitches. Believe me, your friends or mom , will loves it. No pattern necessary , just using your imagination and 2 hours working with your sewing machine :)

And if you still lazy to make your own, send me message, I will love to do for you (and not expensive at all, just let me know your fav.colors or pattern) . A Custome made, is always makes me happy.

Joy of being a mom ..

I love being a mom, don't ask me why, but every mom will understand why. Being a mother is so much more fulfilling than anything I’ve ever done and doing things with my kid gave me the most joy of anything I had ever experienced. Even in its worst moments, motherhood is the one job that is always surrounded in love. Lots and lots of love. Many hugs and tickles and smiles and tears all wrapped in pure unconditional everlasting love


To see my kid grow day by day, become priceless moment in my life. Now I do, understand how hard my mom tried to raised the kids!.. three little musketeers !!.. I don't think i can pay back what you did to us, but i believe you know that i loves you so much.



On Friday, when I picked my daughter up from pre-K school , she handy a bunch of tissue-paper flower she made at school and note said that 'she love me' :) ooh, I love you too , dear.. Happy Mother's Day to my mom, and every mom in the world. Ahh.. i wish i can share this little cute cream puff with my mom, to bad, we live faraway from you .. :(




CREAM PUFF WITH CREAM CHEESE FILLING



CREAM PUFF RING:
1 cup water

1/2 cup butter

1 cup all purpose flour

4 eggs


FILLING:
1 1/3 cup semi sweet chocolate morsels, divided 2

3 oz. pkg. cream cheese, softened

1/2 cup sifted confectioners' sugar

1 tbsp raspberry flavored liqueur (optional)

1/2 c. heavy cream, whipped


Cream Puff :


Preheat oven to 400 degrees. In medium saucepan, combine water and butter. Bring to boil over low heat. Gradually add flour, stirring constantly until mixture cleans the sides of pan. Remove from heat.

Add eggs, 1 at a time, beating well after each addition. Drop by 2 rounded tablespoonfuls onto ungreased cookie sheet, connecting to form circle. - i using plain tip, this time.


Bake at 400 degrees, for 35 to 40 minutes. Cool completely.




Filling :
Melt over hot (not boiling) water, 1 cup sweet chocolate morsels; stir until smooth. Set aside.

In medium bowl, combine cream cheese, confectioners' sugar and raspberry flavored liqueur; beat until creamy.

Gradually add melted morsels; beat well. Fold in whipped cream.

Slice cream puffs in half horizontally. Fill with Filling. Cover with top half. Drizzle with Glaze.

life is so fragile..

This story happened last week, to be exact was on Good-Friday. When tornadoes touch down at my city. It was a huge mess, so devastating to see resident lost their property, the tornadoes blew everything away, our International Airport was shutdown for weekend. The report said that Good-Friday storm was the worst the region has seen in more than 40 years. People are going to remember this for a long time. :(

My heart's broken when i passed the tornadoes-area this morning, which is just 5 minutes away from my place ..property damage was significant, many homes destroyed with major damages. That give me a real lesson, that life is so fragile. Chocolate Chips Cookies
Ingredients
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped walnuts

Directions
Preheat oven to 350 degrees F (175 degrees C).
Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

chocolate-ginger biscotti & mural painting

OOH .. WOOWW.. !! Spring is really here, nice weather, still chilled a bit , no complain for sure ! flowers are coming, birds are chirping .. what a lovely weather. And I've been busy around home , let see .. what I've done so far ? painting a spare room , cleaning around the garden, preparing veggie patch .. well, all kind activity i never imagine to do by myself before. Well, back to the time I lived in my country, we spoiled by the maid, yuup . don't think that we are come from rich people .. NO..NO, overseas *in my country i talked about* almost every household has maid. The labor expense are so cheap , no surprise everyone spoiled by maid :O


Not, here ... in US , everyone need more active and creative. Well .. you can pay helper, but the cost will make you pull hair for sure :)


Anyway, after wait for long time, finally, i got an empty room on basement. I tought it will be nice if i have a craft room and playing room for my daughter, so I decide to paint a little bit. But you know, type of me .. can't stop doing things. I know i will get bored with plain color pretty soon,and than i got an idea to add some picture on it.. after 3 weeks, the mural painting still going.. hmm, between.. painting, cooking, baking, taking picture, take care of husband and kid ^LOL^ what you can expect ?? finishing on the time ? NO WAY .. but that is ok to me, little by little i try to catch everything.




here we go i give you a sneak peak , my craft room (wanna be :P )


OK! Back to baking, for sure I still doing that but not take many pictures anymore. This time (and again) I bake another batch of biscotti . And I remember how my sister complained about biscotti recipe, she said, even dog can chew them. I was laughed so loud, I forgot to tell her that we need to bake for a shorter time to make them softer than the traditional version. Well.. Me, too .. I loves soft biscotti *this will avoid you to see your dentist often too .. right ? :O



Chocolate-ginger biscotti

Ingredients: Makes about 15-20 cookies


1 cup all purpose flour

1/3 cup unsweetened cocoa powder

1 1/2 tsp baking powder

1/4 tsp table salt

1 large egg + 1 large egg yolk

1/2 cup sugar

1 tsp vanilla extract

1/4 cup canola oil

1/2 cup almonds, toasted and chopped

1/4 cup crystallized ginger, finely chopped

Directions:

Preheat oven to 350. Butter and flour a baking sheet, set aside.

In a medium bowl, whisk together flour, cocoa powder, baking powder and salt.

In the bowl of electric mixer fitted with the whisk attachment, cream butter and sugar until light and fluffy.

Add eggs, beat until well combine, scrapping down sides of bowl if necessary

Mix in oil and vanilla ; add flour mixture, and stir to form a stiff dough. Stir in chocolate, nuts and ginger by hand.

Because the dough is too sticky, I keep into the refrigerator for a while until dough is easy to handle. Divide the dough in half and roll into logs about 12 by 4 inches.

Place onto cookie sheet lines with parchment

Bake until slightly firm, about 25 minutes, cool on wire rack for about 5 minute.

Reduce oven temperature to 300 degrees.

On a cutting board , using a sharp serrated knife, but biscotti diagonally into 1-inch-tick slice. Arrange biscotti, cut sides down, on baking sheet, and bake until crisp but still slightly soft in the center, about 8 minute.

Remove and cool at room temperature

Banana Caramel Cupcake

My week run so slow ! well, at least that what I feel since my daughter sick, she got fever and coughing constantly for 3 days. Made me worry, and decided to take her to E.R on Monday evening (and came back home on Tuesday morning). Doctor said, that was pneumonia clinical , and she need to take breathing therapy. Thanks GOD, nothing major happen. And she is doing fine today :)

The funny was *thought it was not funny anymore* while we waiting at ER , I checked my Blackberry, and I found her pictures at ER from previous year. Oh, NO .. !! seems every year she go to ER :O - please, don't make it habit :( - I just want her become healthy child *knock knock the wood*

And after a week take care of her, thought that I need get relax a little bit, especially when i feel not well too. Taking a vitamins, a lot of fresh orange juice. Well, you know.. when mom get sick everything will messed up. Bake a simple cake for everybody, back to my book, sipping a cup hot tea, aah.. i feel much better.


Lets try this cake, this is not like your mom , cupcake *wink*




Banana-Caramel Cupcake

Ingredients:

A. Caramel
60g Castor sugar
1 tablespoon water
1 tablespoon hot water
2 tablespoons fresh heavy cream


B.Cake Batter
180g all purpose flour
1 teaspoon baking powder
115 g butter, at room temperature
110g cream cheese, at room temperature
115g caster sugar
3 eggs, separated
2 bananas, cut into thickness small chunk

Prepare your caramel first :
In a medium sauce pan, cook sugar and water with medium heat.
When the syrup turn into amber color, stir in hot water *please be careful in this step* , than add cream, stir well, set aside.

Cake batter :
Preheat the oven to 180 deg C. Prepare your cupcake pan
Using an electric mixer, whip butter, cream cheese and 75g of sugar until the mixture turns pale and fluffy. Continue whipping the mixture, add in egg yolks one by one. With each addition, whip until the batter just combine.
In a separate bowl, whisk egg whites until foamy. Continue to whisk and at the same time, add remaining 40g of sugar in 3 batches. Whip the egg white until stiff peak forms.
Using a rubber spatula, stir in 1/3 of egg white into cream cheese mixture , Sift flour and baking powder over the batter, stir until combine. Fold remaining egg, stir and make sure that the batter is well combined.
Stir in banana pieces and caramel. Scrape the batter into the baking pan.

Bake in pre-heated oven for 30 minutes or less, or until a skewer inserted in the center of the cake turns out clean.

Coke, Cup Cake, Cold ....


We had a very bad weather last week , heavy storm everyday for almost a week. Most schools , offices were closed, and most people went to grocery store to prepare the very bad scenario . That was a bad situation that I can remember during 6 years ... Thanks GOD, nothing happen in our area. Feel sad for some who became victims of crazy weather

But today, we have a very clear sky , warm enough to go out side just wearing a light jacket and feel almost like a spring until 7 days latter . I took my daughter to shopping mall today, oh NO .. !! I forgot is only 2 days before valentine's day. The mall so packed !! people busy shopping for valentine's Day. Well.. well..well, not me ! :D I don't really care about the event. But I still want to share the nice recipe that you can make for your beloved one for valentine's Day :D


COCA COLA CUPCAKE !!
Ingredients

Part A-
1 cup butter
1 cup coca cola
2 tbsp un-sweetened cocoa powder
2 cups tiny marshmallow

Part B-

2 cups all purpose flour

2 cups granulate sugar

1 teaspoon baking soda

1 teaspoon vanilla

1 cup buttermilk or sour milk *

2 large eggs, lightly beaten


Coca Cola Frosting
1/2 cup chopped pecan, toasted

Directions
Preheat oven to 325 degrees. Line cupcake pans with paper liners.

In a small saucepan mix cola, butter, and cocoa. Bring to a boil, remove from heat, and add marshmallows. Place lid on saucepan and leave until marshmallows begin to melt. Stir well.

Mix flour, sugar, and baking soda in a large mixing bowl. Add buttermilk, eggs, and vanilla. Mix well.
Combine cola mixture in the mixing bowl. Spoon cupcake batter into cupcake pan liners until they are 1/2 to 2/3 full.

Bake at 325 degrees for approximately 20 minutes or until toothpick inserted in center comes out clean.
Cool cupcakes completely before frosting with coca cola frosting and sprinkle with pecan.

Coca Cola Frosting

Ingredients

1/3 cup butter
3 3/4 cups powder sugar
2 tbsp un-sweetened cocoa
1/4 cup coca cola
2 tbsp powdered cocoa

Directions
In a medium mixing bowl, beat 1/3 cup butter with an electric mixer on medium to high speed for 30 second.

Slowly add 2 cups powdered sugar and 2 tbsp cocoa, beating until combined

Add 1/4 cola, beating well than gradually beat in 1 3/4 cups additional powdered sugar until combined.If necessary, beat in enough additional cola, 1 teaspoon at a time, to make frosting of spreadable consistency.

* To make 1/2 cup sour milk : place 1 1/2 teaspoon lemon juice or vinegar in a glass measuring cup. add enough milk to make 1/2 cup total liquid, still. Let Stand for 5 minute before using.

Coconut Marble Cake


Do you have a new year resolution ? Did you already break your a new year resolution ? Well, some people still make a new year resolution every year, and how many of them passed it ? I bet every one has at least once a new year resolution.

I'm not so organize people who always make notes , and I know I couldn't or even forget what is my goal last year ? What I know is today I lost 5 lbs. *I did Dora's Dancing* :DD ... and still long way to go, since I already have number on my mind . Hopefully I can reach it. And another promise i made to my self is to be more patient behind the wheel. *gosh, can't you believe that I got ticket for speeding right before Christmas.. it was suck !! $100,- is gone !! - no more speeding, no more reckless..please !

OK, than enough about me ! Now lets back to the kitchen :))




What I remember is, this is already 3 times I bake Coconut Marble Cake during 2 weeks, surprised me is my daughter loves this cake very much. Pretty simple and yet delicious, lets try ..

Coconut Marble Cake

Recipe Ingredients
1 1⁄2 sticks (3⁄4 cup) unsalted butter, softened
1 1⁄2 cups sugar
2 tsp baking powder
2 tsp vanilla extract
4 large eggs
2 cups all-purpose flour
1/4 cup coconut powder
1 cup coconut milk
2 tsp coconut extract
1⁄2 cup semisweet chocolate chips
1 cups sweetened flaked coconut, finely chopped


Chocolate Drizzle: 1⁄2 cup semisweet chocolate chips melted

Garnish: toasted coconut



Recipe Preparation
1. Heat oven to 350°F. Grease and flour a 10-in. (12-cup) bundt pan.

2. Beat butter, sugar, baking powder, coconut extract in a large bowl with mixer on high 3 minutes or until fluffy. Add eggs, 1 at a time, beating well after each. On low speed, beat in flour in 3 additions alternately with coconut milk in 2 additions, just until blended, scraping sides of bowl as needed.

3. Melt chocolate chips in a medium bowl in microwave as pkg directs. Cool slightly, then stir in 1 1⁄2 cups batter until blended.

4. Stir coconut into remaining batter. Spoon 2 cups into prepared pan. Drop spoonfuls of chocolate batter into pan, leaving spaces between each dollop. Drop spoonfuls coconut batter between chocolate batter. Repeat, alternating batters, with the rest. Run a knife through batters to marbleize.

5. Bake 55 minutes or until a wooden pick inserted in center of cake comes out clean. Cool in pan on a wire rack 15 minutes before inverting cake on rack to cool completely.

6. Scrape melted chocolate into a small zip top bag. Cut a tip off 1 corner and pipe chocolate over cake; sprinkle with toasted coconut.

Planning Tip: Can be made up to 5 days ahead. Store covered at room temperature.
