Matcha Macaron

Matcha Macaron // Green Tea Macaron by Fitri D. // Rumah Manis

Aaah, I tough my 'magic wand' is fade , since I never bake macaron for almost a year. .. surprise I still can make a perfect macaron ; you know when you talk about macaron mean you talk about "distinctive crust" and a "foot" of the cookies.  Is only 4 ingredients for sure, but there are number of ways to go wrong.  Macaron , a pretty simple cookies yet mysterious. Every thing must be perfect, time is so crucial when baking macaron - when you must to stop running the mixer, when you must to stop folded the batter etc.  But don't worry ; don't be intimidate .. just relax and bake macaron ; you will learn from your mistake.
 
Matcha Macarons
Ingredients :
1 1/2 cups whole almonds, with skin // this is work with hazelnut too
2 1/4 cup powdered sugar
3 large white eggs - room temperature ! ** MUST **
1 1/2 tsp cream of tartar
2 tbsp. of green tea powder
 
Chocolate Ganache for filling
10 ounces chocolate (62% or semi sweet) ; chopped
2/3 ounces sifted powdered sugar
3/4 cup heavy cream
2 eggs yolks
3 tbsp. unslated butter ; room temperature
 
Directions :
Line 2 baking sheet with parchment paper.
 
Divide almond and powdered sugar into half portion - Place almond and powdered sugar in food processor. Process 30 second,  until almond finely ground. Repeat the process with the remaining almonds and powdered sugar.
 
In the bowl of a stand mixer, combine white eggs and cream of tartar ; whisk on high speed until very stiff peak from 3-4 minutes.
Using a rubber spatula, gently fold about 1/3 of the almond mixture into white eggs. Fold in the remaining mixture in two more addition, just until the ingredients are completely combine. Add the green tea powder. You don't want over fold too or your will have a running batter. (use your instinct, though..)
 
Fit a pastry bag with a medium plain round tip and fill the bag just a half of bag, don't put too much batter. Pipe 1-inch circle onto baking sheet. Let sit at room temperature for 1 hours, this allow the macaron to develop their base on the bottom {signature foot}
 
Preheat oven to 325 F - bake for 10 to 12 minute, transfer the baking sheet to wire racks and let it cool completely on the pans. Filled the shell with chocolate ganache or any kind of buttercream you prefer.
 
 
 
Making Chocolate Ganache
Combine the chocolate and powdered sugar in a heatproof bowl.
In sauce pan over medium heat, bring the cream to a gentle simmer. Pour the hot cream over the chocolate, stir until sugar is dissolved.  Heat, stirring until the chocolate is melted and the mixture is smooth. Remove the bowl from the heat.
Whisk the yolks in a small heat proof bowl. Pour about 1/2 cup of the melted chocolate mixture into the yolk. Pour the tempered mixture back into the pan of chocolate and whisk to combine. Add the butter and stir until smooth. Pour the hot ganache through a fine mesh sieve ito a clean heatproof bowl.
 
Use the ganache immediately

I Spy Christmas ...

I'm just as exciting as you are when come to Christmas Decorations.. Christmas Fabrics .. etc. really, I  like a little kid just get a jar of candies when I go to stores during this day. All the Christmas atmosphere always remind me when I came to US for the first time,in the winter time , first day of December many years ago, every thing were so festive.

A new stash ..

Christmas is just around the corner, and I've been busy doing some projects for a lady who came to our dinner party last week. She wants some of my craft works, well.. she said she is not rush - but I'd like to doing on schedule and not postpone the work especially working with a lovely fabrics. Who can resist this pile of fabric from heaven  LOL

I got this a new fabrics last Friday , oh..wow, they are just as beautiful as I can imagine when I saw for the first time from my flickr friends, Tasha.  She has so adorable fabric collections, that I will like do "fasting" - not shopping a new shoes to exchange with hers fabrics *grin*

Now, let me excuse my self back to my sewing machine.. and I will come back bring my food recipe tomorrow to share with you.ok.

Ginger & Date Cake

I tried to organize some of my pictures *uupss.. already more than 1,000 ?? * before my computer crack down ^_^ .. and I found some of food pictures I taken on 2010 are not posting yet , OK .. than before getting lazy let me write the recipe .


Pretty simple recipe and what I loved about this recipe was, you just need to put all ingredients together in food processor .. that's it .. not many of bowl to wash after that.


Fluffy ginger and date cake
Recipe : Patricia - Technicolor Kitchen

2 cups + 2 tablespoons (300g) all purpose flour
2 teaspoons baking powder
¼ teaspoon salt
1 ½ teaspoons ground ginger
3 cups (420g) fresh pitted dates, chopped
1 cup (240ml) boiling water
2 teaspoons baking soda
200g unsalted butter, room temperature, chopped
1 ½ cups (262g) brown sugar, packed
4 eggs

Icing sugar, for dusting


Preheat the oven to 180°C/350°F. Butter a 26x16cm baking pan, line with baking paper and butter the paper as well.

Sift the flour, baking powder, salt and ginger into a large bowl and set aside.

Place the dates, water and baking soda in a bowl, mix and allow to stand for 5 minutes.

Transfer to a food processor, add the butter and sugar and process until well combined. Add the eggs, one at a time, and process well.

Pour over the flour mixture and mix well with a wooden spoon.

Pour batter into prepared pan and bake for 30-35 minutes or until risen and cooked when tested with a toothpick. Allow to cool in the pan, then carefully unmold.

Cut into squares or diamond shapes and dust with icing sugar to serve.

Happy Holidays ..



One day my daughter said, 'Mom, when I grow big i will learn how to cook and bake like you' Oh.. she melted my heart :D - well, since we have a long holiday weekend, I asked her to bake together.. and she really enjoyed the baking process.

And here we go, the one of her favorite holiday cookies, Stained-Glass Sugar Cookies ! Pretty easy to make and bring smile to her face , what a great combination !!

Stained-Glass Sugar Cookies

Recipe Ingredients
3 sticks (1 1/2 cups) butter, softened
1 cup sugar
1 large egg
2 tsp baking powder
1 tsp each ground ginger and vanilla extract
1/2 tsp salt
4 cups all-purpose flour
About 50 assorted colors Life Savers or Jolly Ranchers hard candies, each color crushed separately



Recipe Preparation
1. Beat butter and sugar in a large bowl with mixer on medium speed until pale and fluffy. On low speed beat in next 5 ingredients to combine. Gradually beat in flour until blended.

2. Divide dough in half; shape each into a 1-in.-thick disk. Wrap and refrigerate 30 minutes, or until firm enough to roll.

3. Heat oven to 350 degrees F. Line baking sheets(s) with foil; coat with nonstick spray. Have ready a star cookie cutter.

4. Meanwhile prepare your crush candies . Pick out all the red and blue candies from your bag of Jolly Ranchers Unwrap them and put them in separate Ziploc bags. Using a meat mallet, crush the candies into little, bitty pieces .

5. rolled the dough, cut large star shapes out of it. cut out about six big stars first

6. Using a smaller cookie cutter , remove a star-shape from the center of each large star.

7. Fill the small star-shaped holes with the pieces of the hard candy. It's OK if there are a few gaps. They will fill in when the candy melts.

8. Bake for 8-10 minutes, until the edges of the cookies have just started to brown and the candy in the center has melted and smoothed out.

9. Be sure to allow the cookies to cool and the candy to harden before transferring to a wire rack to cool thoroughly
