Taste must be good ...



Sometime I wonder, if I too 'hard' to my 3 years old daughter ? What I mean about 'hard' is : I don't want she make a mess a round, she need to learn to take responsibility for her own toys . After playing with her toys, she need to put everything back into her toy box. Well, sometime it works.. sometime not.. LOL. ^_^


Anyway, when she doing nice things, I like to give her compliment, such a baking cookies that she loves or another way, I sew a nice bag for her . To see smile on her face make me happy and forget about my backpain after pick-up all the toys

so, why don't you bake this for yourself too ? I promise you will love and wont stop until finish :D



Choco-Marshmallow Cookies

1 3/4 cups all-purpose flour
3/4 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
1 large egg
1/2 cup milk
1 teaspoon pure vanilla extract
12 large marshmallows, cut in half horizontally

Directions
Preheat oven to 375 degrees. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, about 2 minutes. Add egg, milk, and vanilla, and beat until well combined. Add reserved flour mixture; mix on low speed until combined.

Using a tablespoon or 1 3/4-inch ice cream scoop, drop dough onto ungreased baking sheets, about 2 inches apart. Bake until cookies begin to spread and become firm, 10 to 12 minutes.
Remove baking sheets from oven, and place a marshmallow, cut-side down, in the center of each cookie, pressing down slightly. Return to oven, and continue baking until marshmallows begins to melt, 2 to 2 1/2 minutes. Transfer cookies to a wire rack to cool completely before frosting.

Spread about 1 tablespoon of chocolate ganache over each marshmallow, starting in the center and continuing outward until marshmallow is covered.

Makes : 2 dozen cookies


Chocolate Ganache

1/2 cup heavy cream

5 1/3 oz dark chocolate


grate the chocolate and place it in a bowl. Heat the cream and bring ti a simmer. Stop and pour over the chocolate, let sit for 1 minute the mix together to get a smooth paste. Let cool before using.

  5. Red velvet is one of my and my daughters' favorite cupcakes. We just made them two weeks ago using, of course, store bought packages. I would love to try making them fresh. Thanks for the recipe.
