Banana Marzipan Muffin

This muffin is on my daughter snack box today, she was so happy when I asked 'what she like me to put on her snack box for today? ; no doubt she pointed to the muffin I made yesterday afternoon.  It was funny moment , while she entered the kitchen after school yesterday !! She said.. "ooh, what a wonderful muffin, I want get 1 for my afternoon snack, what kind of muffin is this ?   I said "banana marzipan chocolate muffin"  -  she showed a funny expression, and said "oh... well, I'm not fan of banana"  ; aaaw ...  really ? since when she become a picky eater ? all right this is time for mom, show her trick .. . I reply again , " well... don't worry banana is just for a flavor like I put vanilla essence the other day, the main ingredient is CHOCOLATE CHIPS"
She said : "ok, I take one" .. after several minute, "ooh, you are right, I have a big chunk of chocolate chips, no banana slice ..this is so delicious, I want this for my tomorrow snack too"    Yeaaaaa... score for me !!
Banana Marzipan Chocochips Muffin
1 1/2 cups sugar
1 1/2 sticks unsalted butter, melted
2 cups mashed overripe bananas (about 6)
3 large eggs
2 3/4 cups all-purpose flour
2 1/2 teaspoons baking soda
1 package (95gr) of Chocolate Cover Marzipan , chopped - I found this at ALDI
1 teaspoon salt
1 cup mini chocolate chips (6 ounces)

1. Preheat the oven to 350° and line two 12-cup muffin tins with paper or foil liners. In a large bowl, combine the sugar, melted butter, bananas and eggs; mix thoroughly. In a medium bowl, whisk the flour with the baking soda and salt. Add the dry ingredients to the wet ingredients and whisk until the batter is evenly moistened. Stir in the chocolate chips. 

2. Spoon the batter into the prepared muffin cups. Bake for about 28 minutes, until a toothpick inserted in the center of the muffins comes out with a few moist crumbs attached. Let the muffins cool for 10 minutes before turning them out onto a rack to cool completely.

Make Ahead The banana muffins can be wrapped in plastic and frozen for up to 1 month. Let thaw and toast in a 350° oven.

End of Journey

Aww .. what a dramatic title . But that is so true , after searching , trying so many banana bread recipes , now is come to the end of searching , I will never change recipe no more ... its so delicious, and still pretty much simple to bake .. the journey is end :P

Flour's Famous Banana Bread
Recipe : Joanne Chang

1 1/2 cup (210) gr unbleached all-purpose flour
1 tsp baking soda
1 /2 tsp ground cinnamon
1/2 tsp kosher salt
1 cup + 2 tbs sugar (230 gr)
2 eggs
1/2 cup (100 gr) canola oil
3 1/2 very ripe, medium banana, mashed
2 tbsp. crème fraiche or sour cream
1 tsp vanilla extract
3/4 cup (75 gr) walnut havles, toasted, chopped

Directions :
Position a rack in the center of the oven. Pre-heat the oven to 325 F. Butter a 9 x 5 inch loaf pan,

In a bowl, sift together the flour, baking soda, cinnamon, and salt. Set a side

Using a stand mixer, beat together the sugar and eggs on medium speed for about 5 minute or until light and fluffy.

On low speed, slowly drizzle in the oil. Don't pour the oil in all at once. add it slowly so it has time to incorporate into the eggs and doesn't deflate the air you have just beaten into the batter. Add the banana, cream / sour cream, vanilla continue to mix on low speed just until combine.

Using a rubber spatula, fold in the flour mixture and the nuts just until thoroughly combined. Pour the batter into the prepared loaf pan and smooth the top.

Bake for 1 t0 1 1/4 hours or until golden brown on top,and the center spring back when you press it. Let it cool in the pan on a wire rack at least for 30 minutes .

The banana bread can be stored tightly wrapped in plastic wrap at room temperature for up to 3 days. Or it can be well wrapped in plastic wrap and frozen up to 2 weeks.

Banana Peanut Butter Smoothie

Are you in stage of being 'sick' when I posted recipe with left over / ugly banana ? LOL - I know , I know .. but to be honest, I need more creative than just make a banana bread , all right actualy I have another reason , I need to get more healthy as my healthy new year resolution is being fade in just second month of new year .. *eeeww..*  
And mommy need a new bikini for summer break *grin*

The recipe is so simple, and I can just drink this smoothie and won't feel hungry until late afternoon ...

Banana Peanut Butter Smoothie

Ingredients :
1 banana
1-2 tbsp. peanut butter
2 tbsp. cocoa powder
1 tbsp honey
1/2 cup water
1/2 cup ice

even more better you can add (as I do)
1 scoop protein powder or
1 scoop flax seed or
1 scoop antioxidant omega 3 or
any kind of protein food that you can find from a healthy store near by

1.Combine all of the ingredients in a blender.
2.Blend until smooth and creamy.
3.Pour and serve cold.

Banana Whoopie Pies

Its my fault - always buy banana every time to go grocery and you know what happened ? there is always 1 or 2 an old banana in the corner of pantry. And getting tired of banana bread, I decide to make a whoopie pie .. hmm.. surprise I do love this kind of little cookies. Easy peasy .. and I think my little one and my cookie monster (eer.. my hubby, I mean) will like it too
Banana Whoopie Pie
Ingredients : - make 12

2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large ripe banana, mashed
1/2 cup sour cream or any kind of plain yoghurt
4 ounces (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1 large egg
1 teaspoon pure vanilla extract
16 ounces cream cheese, softened
1 cup confectioners' sugar, plus more for dusting


1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment. Sift flour, baking powder, baking soda, and salt into a bowl. Combine banana and sour cream in another bowl.

2. Beat butter and granulated and brown sugars with a mixer on medium-high speed, until pale and creamy, about 3 minutes. Add egg and 1/2 teaspoon vanilla, beating until incorporated. Add banana mixture in 2 additions, alternating with flour mixture.

3. Transfer batter to a pastry bag fitted with a 1/4-inch plain tip. Pipe batter into 1 1/4-inch rounds on baking sheets, spacing rounds 1 1/2 inches apart.

4. Bake until edges are golden, about 12 minutes. Slide parchment, with cookies, onto wire racks. Let cool. (Unfilled cookies can be stored for up to 1 day.)

5. Beat cream cheese, confectioners' sugar, and remaining 1/2 teaspoon vanilla with a mixer on medium speed until smooth, about 2 minutes.

6. Pipe or spoon 1 tablespoon cream cheese mixture onto the flat sides of half the cookies. Sandwich with remaining cookies. Dust with confectioners' sugar, and serve immediately.

Banana Chocolate Chiffon Cake

Can't tell you more, but this is a second time in a week I bake this cake, I got from my buddy blogger, Rima (A lovely Malaysian lady, who can bake any kind of cake that you can ever imagine, she is .. I'm not kidding)

First time I bake, it just need a half hour to finished half of pan of cake. My cookie monster(s) at home love it .. eergh, I'm talking about hubby and kid. Maybe because the cake is so moist, and light .

Today, my daughter is sick, she get throat-ache and I decide not to send her to school - but she said, in the afternoon she will be fine and will bake a banana chiffon cake!! oh, jezz .. never heard any other kids say that. But she is, it's funny her body temperature turn normal in the afternoon and right the way want to bake . Ok, mommy let her to do that ..

Here is the recipe - Thank you Rima :)


Banana Chocolate Chiffon Cake
Ingredients :
20gr cocoa powder
60ml hot water
100gr banana – mashed
35gr cooking oil
½ tbsp chocolate paste
85gr cake flour
1/2 tbsp ground cinnamon
1 tsp baking powder
75 gr caster sugar (I’m sweet tooth, mine is 100gr sugar)
5 yolks eggs
5 white eggs
½ tsp salt
75 gr caster sugar (for white egg mixture)

Method :
Dissolve cocoa powder in hot water. Add smashed banana, cooking oil, chocolate paste, stir well, set aside.
Sift flour, cinnamon, baking powder.
Whisk sugar and yolks with stand mixer until pale. Add in cocoa mixture. Continue to whisk at low speed. Add batter into sifted dry ingredients
Beat white eggs and salt until half inflate, add sugar a little at time and continue to whisk till stiff peak.
Add egg white , fold in gently and lightly. Pour into ungreased chiffon pan
Bake in preheated oven of 350 F about 50 minutes (usually this chiffon bake till 60-70minute, but mine just 50 minutes and this keep my chiffon so moist)

Pisang Molen Keju // Banana Wrapped in pastry

It's only me or others feel the same like I do ? I always miss my home town, my extended families especially during Ramadan. I miss the moments while we were a little, mom prepared snack - a sweet's stuff for iftar before we continue with together pray.
Actually I don't really care to make dessert for iftar (the evening meal for breaking fasting during the Islamic month of Ramadan) especially when summer like this, our fasting is getting longer than others. We start since 4.30am till 8.30pm. So, no time to snacking off course.
But not this snack that I've been craving since see the recipe from my talented fellow blogger, mba
Hesti - thought I gain 1 lbs everytime visiting her blog .. *grin*

Here is the copy of recipe I got from her. You can use ready to use puff pastry instead but to me, I always want to get as close as the original taste, so it's fine for me to spend more time for preparing to get a very delicious Pisang Molen Keju as like I always get from bread store at Bandung area a very long time ago.

250 gr tepung terigu
30 gr gula pasir
2 kuning telur
125 gr butter + 1 sdm butter (Hesti using 125gr korsvet)
1/2 sdt garam (skip if use salted butter)

Pisang Raja yang matang (kukus, potong-potong)
Keju (i used cheddar slice)
gula pasir atau susu kental manis
1 kuning telor + 1 sdt madu untuk olesan

Cara Membuat :
1. Kulit Pastry campur terigu, gula, garam, aduki rata, tambahkan kuning telor dan air, aduk kembali . Terakhir tambahkan 1 sdm butter. Bulatkan, simpan di kulkas selama 15 menit.

2. Keluarkan dari kulkas , giling membentuk persegi panjang,isi dengan 125gr butter dingin, Tutup dari bagian yang tidak mencapai butter ke tengah lipatan. Giling lagi , dan lipat kembali seperti cara pertama. Lakukan sebanyak 4x lipatan. Simpan kembali di kulkas.

3. Giling tipis adonan , potong kotak (exact square) taburi tengah adonan dengan gula pasir atau susu kental manis sedikit, beri potongan pisang raja, beri irisan keju (Fitri : pakai setengah irisan keju cheddar slice), Beri gula sedikit diatas nya. Lipat seperti amplop. Oles dengan kuning telur yang telah di campur madu.

3. Letakkan di baking pan, beri jarak, panggang sampai kuning ke-emasan. (Fitri : 350 F selama 20menit)

- I've been tried short cut before using 'ready to use, puff pastry' the result was puff very nicely on the oven, 10 minute after left oven.. the pastry is shrink.. eeeerrr.. so, to me, the best way is made from stratch.

Banana Chocolate Chips Cookies

Sunday morning, daylight saving time is ends .. mean is we can sleep 1 hour longer than usual . But my body still not adjust yet, is like having alarm on your brain, right the way I woke up in the same time like always. Uuugh. .. what should I do ? don't you think Sunday is the perfect day to become lazy ? and the other hand I didn't go for jogging today, since I went jogging yesterday afternoon.
Went to the kitchen, try not to make too much noise, since the little one still deeply sleep (ooh, maybe like others parent , I love to see my innocent baby face while she is sleep like that.. so peaceful) . Too early to make my own breakfast, and I saw 2 ugly-looking bananas in the corner of the kitchen table. Right the way, I peel them, smashed and olalaaa.. I already baking chocolate banana cookies early Sunday morning *grin* And, the aroma of cookies wake my daughter up too .. she went to the kitchen , ask permission to get a very special Sunday breakfast .. COOKIES !! yup .. in a second she finished 2 yummy delicious cookies ..
I admit, I fell in love with this cookie too .. so soft, chewy and healthy too LOL ... well, there is banana inside of the cookies .. what you think ?


Ingredients :
1/3 cup butter, softened
1/2 cup sugar
1 egg
1/2 cup mashed ripe banana
1/2 teaspoon pure vanilla extract or if you have banana extract will be perfect !!
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt

1/8 teaspoon baking soda

1 cup (6 ounces) semisweet chocolate chips

Directions :
In a small bowl, cream butter and sugar until light and fluffy. Beat in the egg, banana and vanilla. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture and mix well. Stir in chocolate chips.

Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake at 350° for 9-11 minutes or until edges are lightly browned. Remove to wire racks to cool.

Yield: 3 dozen.

Note : if you like add 1 tbsp chocolate powder, and subtitute chocolate chips with white choco chips

(please, make 2 times of this recipe ! you don't want people fight over this delicious cookies :D )

Banana Pistachio Biscotti

I try to catch everything today. After my daughter feeling well, than was my turn got sick too. Not feel well for almost a week. It's kind of hard, since I don't have any family member around me to help with "domestic matter" and especially with my little one, she doesn't like to go school . She said she just want to take care of me.. *aah.. so sweet*

And with a runny nose still.. every morning I still need to give her 'home schooling project' so she won't left behind even she is just pre-K student :)

And you think I stop baking and cooking ? :P - NO .. !! cooking and baking are my healing power :D

Banana Pistachio Biscotti

1 3/4 cups all-purpose flour
2 cup brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 ripe-banana, mashed
1 tablespoon vegetable oil
1 teaspoon vanilla
2 eggyolks
1/2 cup pistachio
dark chocolate for dipping

Preheat oven to 350°F . Lightly grease your cookie sheet.

In bowl of your electric mixer (or with a hand mixer), beat the brown sugar and eggs on high speed until thick, pale, and fluffy (about 5 minutes). (When you slowly raise the beaters the batter will fall back into the bowl in slow ribbons.) At this point beat in the vanilla extract

In a separate bowl, whisk together the flour, baking powder and salt. Add to the egg mixture and beat until combined. Fold in banana, oil, and pistachio

Keep the dough in refrigerator for 10 minutes so will be easy to handle

Transfer the dough to your parchment lined baking sheet and form into a log, about 12 inches (30 cm) long and 3 1/2 inches (9 cm) wide. You may have to dampen your hands to form the log as the dough is quite sticky.

Bake for 25 minutes, or until firm to the touch. Remove from oven and let cool on a wire rack for about 10 minutes then cut into about 3/4 inch (2 cm) , on the diagonal. slices and bake 15 minutes at 250°F. Turn in half way. Biscotti will still be soft but will harden as they cool.

Remove from oven and let cool. Dip into melted chocolate. Let cool Store in an airtight container.

Makes about 16 biscotti.

Banana Caramel Cupcake

My week run so slow ! well, at least that what I feel since my daughter sick, she got fever and coughing constantly for 3 days. Made me worry, and decided to take her to E.R on Monday evening (and came back home on Tuesday morning). Doctor said, that was pneumonia clinical , and she need to take breathing therapy. Thanks GOD, nothing major happen. And she is doing fine today :)

The funny was *thought it was not funny anymore* while we waiting at ER , I checked my Blackberry, and I found her pictures at ER from previous year. Oh, NO .. !! seems every year she go to ER :O - please, don't make it habit :( - I just want her become healthy child *knock knock the wood*

And after a week take care of her, thought that I need get relax a little bit, especially when i feel not well too. Taking a vitamins, a lot of fresh orange juice. Well, you know.. when mom get sick everything will messed up. Bake a simple cake for everybody, back to my book, sipping a cup hot tea, aah.. i feel much better.

Lets try this cake, this is not like your mom , cupcake *wink*

Banana-Caramel Cupcake


A. Caramel
60g Castor sugar
1 tablespoon water
1 tablespoon hot water
2 tablespoons fresh heavy cream

B.Cake Batter
180g all purpose flour
1 teaspoon baking powder
115 g butter, at room temperature
110g cream cheese, at room temperature
115g caster sugar
3 eggs, separated
2 bananas, cut into thickness small chunk

Prepare your caramel first :
In a medium sauce pan, cook sugar and water with medium heat.
When the syrup turn into amber color, stir in hot water *please be careful in this step* , than add cream, stir well, set aside.

Cake batter :
Preheat the oven to 180 deg C. Prepare your cupcake pan
Using an electric mixer, whip butter, cream cheese and 75g of sugar until the mixture turns pale and fluffy. Continue whipping the mixture, add in egg yolks one by one. With each addition, whip until the batter just combine.
In a separate bowl, whisk egg whites until foamy. Continue to whisk and at the same time, add remaining 40g of sugar in 3 batches. Whip the egg white until stiff peak forms.
Using a rubber spatula, stir in 1/3 of egg white into cream cheese mixture , Sift flour and baking powder over the batter, stir until combine. Fold remaining egg, stir and make sure that the batter is well combined.
Stir in banana pieces and caramel. Scrape the batter into the baking pan.

Bake in pre-heated oven for 30 minutes or less, or until a skewer inserted in the center of the cake turns out clean.

for 15 - 18 cupcake

Banana Cupcakes with Honey-Cinnamon Frosting

Another recipe you can make from left over banana ! Don't throw your ugly banana let's just make cupcake, and if you aware to loss weight like I do, you can bring some of your cupcake to your kid school and share with the teachers .. believe me they will love it .. See, you are not only loss weight but make people happy too *Let, me make confess this cupcake is so delicious... ^_^

Banana Cupcakes with Honey-Cinnamon Frosting
Recipe : Martha Stewart

Makes 12
1 1/2 cups all-purpose flour (spooned and leveled)
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted
1 1/2 cups mashed bananas (about 4 ripe bananas), plus 1 whole banana, for garnish (optional)
2 large eggs
1/2 teaspoon pure vanilla extract

Preheat oven to 350 degrees. Line a standard 12-cup muffin pan with paper liners. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Make a well in center of flour mixture. In well, mix together butter, mashed bananas, eggs, and vanilla. Stir to incorporate flour mixture (do not over mix). Dividing evenly, spoon batter into muffin cups.

Bake until a toothpick inserted in center of a cupcake comes out clean, 25 to 30 minutes. Remove cupcakes from pan; cool completely on a wire rack. Spread tops with Honey Cinnamon Frosting. Just before serving, peel and slice banana into rounds, and place one on each cupcake, if desired.

Honey Cinnamon Frosting
1 1/4 cup confectioners' sugar
1/2 cup (1 stick) unsalted butter, room temperature
1 tablespoon honey
1/8 teaspoon ground cinnamon

In a medium bowl, using an electric mixer, beat confectioners' sugar, unsalted butter, honey, and ground cinnamon until smooth, 4 to 5 minutes
